The Future is Indeed Bright

Cagayan de Oro City is famous for outdoor water activities like kayaking, sailing, mountain waterfall spelunking and, of course, white water rafting. Known as the White Water Rafting Capital of the Philippines, it has become a favorite tourist destination in northern Mindanao. But it’s not just these events that bring people to the province of Misamis Oriental. There’s also business opportunities, eco-tourism, culture pursuits and food.

CDO,  according to the Philippine Statistics Authority, recorded the fastest growth per capita GRDP in Region X in 2022 with a 9.4% growth.  The economy of the city has lead the way in the recovery of the region, post-pandemic. In October of last year, the city government reported that it had obtained PHP 8 billion worth of investments from various business groups. They received letters of investment for a mall, convention center, public market and transportation terminal. The City of Golden Friendship is truly leading the way in getting the region past the hump of the pandemic.

Eats at Cagayan de Oro

Kagay-anons are proud of the delicacies of their province. One will not run out of choices when it comes to food and drinks, as the foodservice industry continues to recover and expand with more new restaurants opening up. One of the must-try dishes is sinuglaw, a blend of sinugba (grilled pork belly) and kinilaw (raw fished dressed with seasoned vinegar). The kinilaw is different here because they suwa and tabon-tabon. There is also surol, chicken cooked in coconut milk, humba, fresh seafood and fresh ostrich meat. If you like street food, be sure to try proben, which is skewered proventriculus, that comes from the digestive system of chickens.

Binaki is their version of the tamales. It is enjoyed as snack or dessert, and even given as pasalubong. The sweet corn mixture is wrapped in corn husks and steamed. It is commonly sold along the streets and in the market. Other popular kakanin are muron (suman with chocolate) and puto maya. To bring back home, be sure to buy some pastel (soft buns with sweet filling), peanuts and cashew nuts, chicharron, candied fruits and homegrown coffee beans.

Davao Continues to Regain Ground

Davao City continues to draw local and international visitors not only for tourism but also as a destination place for conferences and events. According to the City Tourism Office, at least 1.1 million tourists visited from January to October 2023, up 57.14% from the same period the year before. They are hoping to soon regain the pre-pandemic tourist arrival figure of 2.5 million in 2019.

The city’s stature as a premier tourism and MICE destination has led to the resurgence of the F&B and hospitality industries with more dining and accommodation establishments opening up on a regular basis. Guests can choose to stay in luxury and boutique hotels, resorts or apartment hotels and dine in style, al fresco, in night markets, or in home-style restos and enjoy drinks in cafes, bars, clubs or at the beach. Whatever your reason for being in Davao, you will surely not run out of options for food, drinks and places to stay.

Kinutil, Sikwate and Durian Drinks

There is a unique drink in the Visayas and Mindanao that you need to try when you come for a visit. Said to be the local version of the popular cocktail called Mudslide – kinutil is a drink of homemade tableya, tuba and raw egg yolks sweetened with condensed milk. Kinutil means stirred in Bisaya. It’s a boozy milkshake that can be enjoyed with suman or bibingka or sipped while lounging by the beaches of Davao.

For those who like their hot chocolate drink without the booze – there is sikwate made from local tableya.  You can enjoy this for breakfast or merienda with kakanin like biko.  And for those with more adventurous palates, there are a variety of durian flavored hot and cold beverages to try like durian coffee, smoothies and milkshakes. Try out all these in the many cafes, bars and restos around the city.

Davao Food Districts

You won’t get hungry (or thirsty) in Davao City! It’s easy enough to look for places to eat because the city has food districts where one can do food and bar crawls. These destinations are made up of eating places offering diverse cuisine, exciting food scenes and differing price points. You can dine based on what you’re in the mood for, what your budget is or how much time you have to eat and drink.

Marfori is one of the original districts with a neighborhood vibe. You can also visit F. Torres and Anda St. right in the heart of the city, Juno Subdivision and Matina Tour Square or Damosa-Lanang. All of these places exemplify the vibrant dining scene of the city and the unique flavors of Davao.

It’s Time to Visit Cebu

Central Visayas logged 2.2 million tourists in the first half of 2023 – of this, Cebu’s share was 1.55 million. According to Department of Tourism (DOT) Secretary Christina Frasco, Cebu is now the most preferred destination among regional overnight travelers. The continuing surge of tourism in the province is one of the reasons why several Tourism Rest Areas (TRA) are set to be opened within the year. The first TRA was opened in Medellin and others will be built in Carmen, Carcar and Moalboal.

The region remained as the fourth largest economy in the land in 2022, according to the Philippine Statistics Authority, with 1.29 trillion worth of goods and services produced. Among the industries in the region, the one that showed the fastest growth, post-pandemic, was accommodation and food services which grew by 47.2%. Lapu-Lapu City recorded the fastest growth of 13.2% at the end of 2022, while Mandaue and Cebu City, were at 9% and 8.4%, respectively.

Let’s Drink to Cebu

When it comes to enjoying a drink, Cebu has a lot of places one can visit. The nightlife is vibrant with restos and bars, tasting rooms and unique wine bars. You can drink on the beach under the stars, in rooftops with sweeping views of the city, in quiet places away from the crowd, in lounges with live music or in night markets while enjoying grilled food. Cocktails, wine, craft beers, liquor and liqueurs, Cebu has it all.

For those looking for non-alcoholic beverages, Cebu has its share of cafes offering local and imported coffee and teas. Tuburan coffee is something one must try – home-grown brew made from beans grown in Tuburan, the coffee capital of Cebu. If you’re looking for hot chocolate for breakfast, then seek out a cup of sikwate made from local tableya – you can savor it with puto maya served with sweet Cebu mango.

A Heritage of Crafstmanship

One of the oldest family-owned distilleries in the country can be found in Cebu. Uy Ma Suy arrived  from Amoy in 1912 and began a business making medicinal wine using traditional Chinese medicinal herbs – he called it Fighter Wine. The Uy Masuy Wine Factory grew and prospered, expanding their line of herbal wines to include Fighter Fifty, Red Lion Sioktong, Red Falcon Mallorca, Mustang and Fighter Gold.

The company has since introduced premium products that include Drunk Barista, Zing Ginger Liqueur and Cebu Mango Rum. Drunk Barista is made from a homegrown blend  of arabica and robusta that is cold brewed in small batches then blended with distilled vodka.  Zing Ginger Liqueur is perfectly flavored for cocktails but can also be taken as a health tonic while Cebu Mango Rum is aged rum infused with dried mango skin and seeds. Uy Masuy Wines is a prime  example of the excellence of Cebuano craftsmanship.

Baguio Continues to Impress

Tourism was the second highest driver for economic growth during the first half of 2023 and the country surpassed the year-end target with 5.45 million international visitor arrivals translating to a revenue of PHP 482.54 billion.

Baguio City continues to be a top tourism draw both for local and international visitors. This is why the Department of Tourism (DOT) has chosen the city as the first site for its Tourist Rest Area project. This will be constructed near the Lion’s Head along Kennon Road and will include rest rooms, a tourist information center and pasalubong center. The project aims to promote stress-free travel while at the same time creating economic opportunities for local businesses.

The city’s thriving economy keeps drawing investors and event organizers.  Expos and trade shows, like WOFEX, serve to drive tourism to the region. These events are widely acknowledged as catalysts for economic growth as they can be the source of opportunities and business for local entrepreneurs. WOFEX continues to promote and support the F&B industry in Northern Luzon with its highly successful WOFEX Baguio.

The Blooming of Baguio

The Panagbenga Festival is more than enough reason to trek up to the City of Pines. The colorful parade of floats bedecked with blooms and plants of the Cordilleras is a sight to watch as well as the numerous performers wearing traditional clothes and headdresses also adorned with beautiful flowers.  This year’s theme is “Celebrating Traditions, Embracing Innovation.”

It’s not just dancing and singing, though, as feasting is also an important aspect of the festivities. Don’t miss out on the strawberry taho, pinikpikan, etag, fresh strawberries and local craft beers while at the same time savoring the diverse food and drinks offered in the cafes, restaurants, bars and hotels. The influx of people has led to the opening of more lodging, sightseeing and eating places which does well for the economy of the city and the region. Check out the newly opened restos, coffee shops and bakeries as well as the galleries, museums and sanctuaries.

Warding Off the Chill in Baguio

One of the main reasons people love going to Baguio is to enjoy the weather. When the temperature drops and you need something to ward off the chill there are a selection of local beverages you can try. Benguet coffee is said to be the best arabica grown in the Philippines so a hot cup of coffee is a very good choice. Non-coffee drinkers can opt for Tsokolate made from home-grown tablea.

Those looking for a drink with some kick can choose from the range of alcoholic beverages available all over town – from the unique Strawberry Wine to the traditional rice wine called Tapuy to the many local craft beers. Beverages are a booming business in Baguio with many cafes starting to offer specialty coffee and bars offering cocktails, beers and liquor.

Market to Table with Chef Waya

Here’s a unique way to see Baguio – in the company of a seasoned chef who knows her way around the market. Chef Waya Araos-Wijangco’s Market to Table Tour is the perfect way to enjoy the bountiful harvest of the region. The tour starts in the must-visit Baguio market and ends in the Chef Waya’s dining room where a wonderful meal is savored. It comes in three parts – market tour, interactive cooking demo and the dining experience.

Chef Waya is the name behind the famous Gypsy Baguio and Taguan Café. She is known not just for her unique and vibrant menu but also for her advocacies in helping young adults with special needs and in working with local farmers. Chef Waya is no stranger to WOFEX Baguio having conducted a class with WOFEX University in the past. The tours are by appointment, you can simply get in touch through her social media accounts.

Bicol Region: On the Way to Achieving Its Full Economic Potential

The National Economic and Development Authority (NEDA), says the economy of the Bicol Region continued to improve in the second quarter of 2023 as manifested by a lower unemployment rate of 3.9% from 6.2% in the same quarter last year. This is even better than the Bicol Regional Development Plan 2023-2028 target of 5-6.5%. The prices situation also showed improvement as the average inflation rate eased to 6%.

A total of 950,508 tourist arrivals were recorded, driven by the conduct of local festivals and tourism expos and the Mayon eruption. Albay Governor Edcel Lagman was quoted as saying, “The number of local visitors in the past nine months has increased by 49% compared to the same period last year, whereas the number of international tourists increased by 516%.” The outlook for the rest of the year is positive for industries where tourism is a contributor.

The Place to Be is…Bicol!

Local entrepreneurs are buoyed by the increase in visitor arrivals in the region, spurred not just by the erratic status of Mayon Volcano but also by the focus being given by the government and the private sector.

The Department of Tourism-initiated caravan called, “Experience Bicol: A Tapestry of History, Tradition and Arts,” brought focus on the region with stops in Sorsogon and Albay. With the aim of equalizing economic opportunities across the regions, it highlighted must-visit places, food, local handicrafts and specialties and the warmth and hospitality of the people. This effort was welcomed by the locals as a boost to the economy and an inspiration for entrepreneurs to continue, improve and strengthen their businesses.

DOT Region 5 Director Herbie Aguas says the department hopes it can surpass the tourism receipts from 2022. “More small entrepreneurs will be helped by this endeavor because as they say, every tourist creates a job. I hope and pray that the P3.6 billion will be hit or even surpassed this year.”

Hot Ice Cream, Anyone?

It was in 2004, when the 1st Colonial Grill in Legazpi City came out with a dessert that featured the region’s hottest star – the siling labuyo. Sili Ice Cream has not only become a trademark product of the restaurant but has also put the Bicol region in the food map for its unique sweet treat that is as hot as it is cold! To make the experience even more entertaining, the owners have come out with three varying levels of heat with the hottest version being served with a shot of fresh milk to balance out the heat. Next time you’re in Bicol, be sure to try a scoop or two!

Pili-Land

Pili products are probably the most popular sweet pasalubong from the Bicol region – from caramelized nuts, masapan, and caramelitos to pudding, chocolates, suspiros and baked goods. The nut is endemic to Bicol so it is widely seen not just in sweet foods but also in savory dishes. Pili oil, with its many good benefits, is not just good for salads and cooking. It is also used in wellness, skin care and beauty products like facial oils, lip balms and moisturizers because of its restorative benefits on skin and hair.

Cooking with Gata

A visit to Bicolandia will not be complete without sampling the best dishes cooked with coconut milk. Have your fill of Laing, Pinangat, Kinunot, Bicol Express, Kandingga, Sinantolan, Sinanglay, etc. But be sure to also try out other local dishes like the famous Pancit Bato, made with special noodles from Bato, Camarines Sur, Kinalas (noodles in a hearty broth) and Kusido. Finish off your food trip by tasting snacks and desserts made with coconut like puto bukayo, biniribid, nilupak and the famous Tiwi Halo-Halo. Masiram!

Buying Food Pasalubong

What to bring home from Bicolandia? You will probably need an extra bag to pack all the wonderful food you can buy and give as pasalubong. With pili products alone, there is already a lot to choose from – from tarts, cakes and candies to local delicacies and sweet or salted nuts. You can also get bottled items like santan (special coco jam with pili), sinantol (santol cooked in gata), laing and Bicol Express or unique chili products like chili chocolate, chili cupcakes or sili beer. There are also various pineapple products as pineapple is one of the main products of the region, as well as tablea, wines and kakanin.

Curacha is It!

Say Zamboanga and most people will immediately think of the curacha, an unusual crab that is found in the waters of Sulu and Zamboanga. A lot of things make it unique – from its shape, its orange color (that stays the same raw and cooked), its flavor and the famous Alavar sauce that the crabs are often cooked in. If only to savor the rich goodness of curacha, one must visit Zamboanga!

Try ZamPen dishes

Zamboanga’s Chavacano cuisine is truly unique and special.  A mix of Spanish, Southeast Asian and indigenous, it includes both familiar dishes with like paella, callos and bacalao, as well as others that may not be as well-known in other regions like satti, beef rendang and tiula itum. Fresh seafood is an important part of the cooking in ZamPen with curacha, lobster, shrimp and a variety of fish taking centerstage in meals. Sweet snacks are also popular, often served in a tray comprised of sweets like panyalam, lokot-lokot and kalling.

Sulu Coffee

In 2016, World Food magazine featured a local coffee shop that has been doing business in Zamboanga City since 1962.  Imelda Ahalul-Dagus of Dennis Coffee Garden shared with us the story of her business – how she worked not just to earn a living but also to help preserve Sulu coffee culture.  Sixty-one years and five branches later, she continues to inspire people with her story and to empower women and the youth while still working to ensure recognition for Sulu coffee (Kahawa Sug) and native Tausug delicacies.

Pasalubong de Zamboanga

What to bring home from Zamboanga? Food! Here are some of what your family and friends will truly enjoy for their unique flavor. One of the most common food gifts from the region is the lokot-lokot, also called jaa or labeled as Zambo rolls in boxed packages.  It is a sweet and crisp noodle-like roll made from rice flour. Baulo or bite-sized sponge cakes (mamon) are also popular. These are best enjoyed with hot coffee or chocolate.  Savory food gifts include the famous Alavar sauce that can be cooked with crabs and shrimps, bottled sardines, dried fish and squid and bottled native sauces like the dayok, ginamos or oyap.

Lovin’ Tuna

Davao is tuna country – not only for the quality of the catch in the area but also the delicious ways the locals have transformed the wonderful fish into a host of dishes. Whether you sit down for a fine meal in a hotel or restaurant, have a quick lunch in a sidewalk eatery or indulge in a drinking party, there are so many ways you can enjoy tuna. Kinilaw, Grilled Tuna Belly or Panga, Sizzling Tuna, Pakfry na Buntot, even as sashimi, sisig, adobo and laing.

Davao’s Master Cheesemaker

The Philippines most prominent master cheese maker calls Davao home.  Olive Puentespina, award-winning entrepreneur, agriculturist, horticulturist and innovator, has made the province known for the best artisan cheeses in the country. Olive’s hands-on cheesemaking webinar for SensoryEx was one of the highlights of WOFEX 2022. The participants were elated at being able to successfully make simple cheese via the online class. Thanks Ms. Olive!

The Philippines Fruit Basket

A visit to Davao will not be complete without savoring the unique fruits of the province.  From its matchless King of the Fruits, durian to the Queen of the Fruits, the mangosteen, from the favorite suha and exotic marang to rambutan, bananas, guyabano, lansones and mangoes. With its fertile soil and climate suitable for agriculture, it is no wonder that Davao is home to some of the best fruits of the country.

World-Class Chocolates

Malagos chocolate put Davao in the food map with its outstanding tree-to-bar products. Made in the Puentespina family farm located in the foothills of Mt. Talomo, the products have gained prominence after winning numerous international awards and accolades including the Heirloom Cacao Designation from the Heirloom Cacao Preservation Fund.  The Malagos brand is a long-time WOFEX partner and friend.

Enjoy Cebu!

Creative Cebuano entrepreneurs continue to up the ante on the province’s pride of joy – the dried mango. After amazing us with the chocolate-dipped dried mango, they are now even coming up with other variants like R&M Preserves Choco Mangga that comes in dark, strawberry, matcha and white chocolate. Delicious and beautifully packaged, Cebu’s dried mango products are truly world-class.

World Food first interviewed Raquel Choa back in 2013 to talk about her chocolate business – Ralfe Gourmet. Fast forward to today and it’s wonderful to see how her business has expanded and reached new heights.  Now dubbed the “Chocolate Queen of Cebu,” she continues to make waves with the Chocolate Chamber. A must-try when in Cebu – enjoy a cup of sikwate.

Titay’s in Liloan in Cebu has been making the flower-shaped cookie called rosquillos since1907. The scions of founder, Margarita “Titay” Frasco, continue the tradition of making the cookies by hand still using her original recipe. While it is wonderful to see their products already available in Manila and in online stores, it is still quite an experience to visit Liloan and choose through the wide array of delightful goodies like the hojaldres, galletas, and sinudlan.

It’s a market like no other, stalls upon stalls of dried fish and other seafood. The smells might be overwhelming but knowing the quality and range of buwad available makes Taboan Public Market a must-visit place whether you are looking to purchase for home use or for your food business. Come to Cebu for some of the best danggit, palad, spada, dilis and dried posit.
